How To Make Parmesan-Covered Zucchini Rounds

We don’t talk about it much, but we do occasionally like to eat healthy. Take these Baked Parmesan Zucchini Rounds, for example.

Created by Five Heart Home, the rounds are made with only a few simple ingredients. All you need is some zucchini, freshly-grated Parmesan cheese and some salt & pepper.

You start by slicing up the zucchini into reasonably thin pieces. Then, scoop a bit of parmesan onto each surface and add your salt and pepper. Once you pop these into the oven for about 15 minutes, they’re good to go.

Zucchini Flan

This Zucchini Flan comes from Qyel, a culinary artist on the up-and-up as can be propositioned from the amazing looking picture above! The dish is complete with the zucchini flan, almond florentine, biscotti, butterscotch and crem anglaise sauce, and fresh fruits. Kudos on a great looking dish!

Craving: Seared Halibut

I am not the biggest zucchini fan, it’s just one of those vegetables that I could never get into. But for some reason when you mix zucchini with chickpeas, add a cilantro-feta cheese dressing and top it off with some seared halibut, that is something I can definitely get into. (Thx FPD)

Craving: Fried Zucchini

As a youngster, I remember always pulling into the Carl’s Jr. drive-thru, getting my order placed, and then my dad would order his own thing…mainly consisting of a diet-Sprite/7up and an order of Fried Zucchini. I always wondered what the hooplah was all about. At the time, I figured Fried Zucchini was an elitist menu item that old folks would order because for some strange reason it meant they weren’t eating the same “fast food” they were spilling into their children. Intricacies aside, I’m only slightly less naive than I was years back, and now Fried Zucchini, regardless of the restaurant, is one of my favorite appetizers! (Thx HenryChan)
