Pistachio Stuffed Pancakes Are The PERFECT Holiday Breakfast

If you want to treat a crowd for a holiday breakfast or brunch, one of the most intriguing ways to do it is with pistachio stuffed pancakes. The revelation of a hidden layer within the breakfast staple is sure to turn heads amongst those eating and will leave them with something to talk about.

There’s several different fillings that can go inside, and this pistachio filling joins together sweet and savory in a unique combination.

Made with Wonderful Pistachios No Shells, Roasted & Salted, the nuttiness and salted flavor of the pistachio blends with the sweet maple syrup for a combination of aromas and tastes that will dance around on the taste buds. The pancake batter further accentuates that relationship with the addition of coconut sugar and coconut oil, which intermingle with the pistachios to tie the filling and the pancakes together.

Ingredients

For pistachio filling
8oz Wonderful Pistachios No Shells, Roasted & Salted
3 Tbsp maple syrup
2 Tbsp water

For the pancakes
1 ¼ cups whole wheat flour
2 ½ tsp baking powder
1 ½ Tbsp coconut sugar
¾ tsp salt
1 egg
1 ¾ cup milk, any kind
3 Tbsp melted coconut oil

For the toppings
Wonderful Pistachios No Shells, Roasted & Salted, chopped
Fresh blueberries
Maple syrup
1 dollop Greek yogurt

Directions

Step 1
Place Wonderful Pistachios No Shells in a food processor and pulse until mixture resembles a buttery smooth texture. Next, add maple syrup and blend on the highest speed until fully incorporated. Add water and blend on high again until fully incorporated. Make sure to occasionally stop and push down the sides of food processor to make sure all of the contents are mixed together.

Step 2
Line a baking sheet with parchment paper. Scoop 1 ½ tablespoons of pistachio mix and roll into a ball. Place balls on the parchment paper. Repeat this process until you’ve used all the mix. Place the sheet pan with the balls into the freezer for 1 hour.

Step 3
Place all ingredients for pancakes in a large bowl and mix until fully incorporated. Remove your pistachio balls from the freezer and give them a light dusting of flour so they don’t stick. When the balls have become somewhat malleable, press them down using your hand or the backside of a pan to flatten into a small, flat circle.

Step 4
Heat a large frying pan on medium low heat. Grease the pan with cooking spray. Spoon two 1-oz pours of batter onto the pan. Once you see bubbles start to appear from the pancakes, place one of the pistachio circles into the center of one of the pancakes. The other pancake should remain plain.

Step 5
When the bottoms are golden brown, flip the pancake without the pistachio disc directly onto the pancake with the pistachio disc. Cook until batter in the middle is fully done. Repeat these steps until you have used all your pistachio circles.

Step 6
Top pistachio stuffed pancakes with a dollop of Greek yogurt, chopped pistachios, fresh blueberries, and a drizzle of maple syrup.

Get The No-Bake Cheesecake Recipe That Looks Just Like An Avocado

Using avocados as dessert vessels is a pretty popular fad right now. Avocado lattes and gelato that looks like the fruit come to mind as fun examples. This No-Bake Pistachio Avocado Cheesecake might be one of the easiest ways to get in on the fun while looking just like a real avocado.

Serving as the “fruit” part of the avocado is the no-bake cheesecake base, which utilizes avocados and Wonderful Pistachios No Shells to keep prep time down to a minimum while delivering big on flavor.

The “pits” use more of the pistachios, along with bananas and agave to create a sweet, nutty core that complements the tangy cheesecake.

Anyone could easily be fooled into thinking these desserts are actually avocados. It’s a simple way to both have a little fun with your friends and create a sweet, nutty, and memorable treat.

Ingredients
For the cheesecake filling
2 large ripe avocados
3 tablespoons agave nectar
1/2 cup of nonfat vanilla or honey Greek yogurt
1 bag Wonderful Pistachios No Shells Lightly Salted soaked in hot water for at least 3 hours (or overnight)
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
For the avocado “pit”
2 cups Wonderful Pistachios No Shells Roasted & Salted
2 small ripe bananas
1 pinch nutmeg
2 tablespoons agave nectar

Directions

Step 1
In a food processor add Wonderful Pistachios No Shells after being drained from the water. Process until pistachios have become smooth.

Step 2
Core our avocados with a regular spoon, careful not to rip the skin.

Step 3
After the pistachio mixture is smooth, add the rest of the ingredients for the filling minus the greek yogurt.. Mix until smooth and then add Greek yogurt. Mix again and then scoop into avocado peels. Set on sheet tray and chill in fridge for 1 hour.

Step 4
Combine all ingredients for the ‘avocado pit’ in a food processor. Mix until desired consistency about 3-5 minutes. Remember to clean sides of food processor to fully incorporate pistachio and bananas.

Step 5
Using a spoon, scoop a small amount of mixture and roll into a ball. The ingredients will be wet. Place balls on a baking sheet lined with parchment paper and chill in the fridge for 20-30 minutes. Place “pit” inside refrigerator firm avocado cheesecake filling. Plate and serve!

Angry Birds Get a Wonderful Pistachios Commercial

All the “it” celebrities get it…Snooki got the Wonderful Pistachios commercial treatment…Khloe and Lamar…and now, the Angry Birds. While the roster of celebrities continues to grow, back in February we did recap of the commercials and all the celebrities involved. I’d like to go out on a limb and say that Angry Birds are one of the more adaptable celebrities in the series of commercials. What better way to open a pistachio then flinging an angry red bird its way?

Wonderful Pistachios brand has been on a roll with their celebrity commercials. With a growing resume that includes Snooki of Jersey Shore fame, comedian Lewis Black, NFL star Chad Ocho Cinco, the Keyboard Cat, the Peanuts Gang and now Wee-Man of the Jackass crew, the list is now more impressive than ever.

All of the commercials ask the audience, “How you do it?”, with each celebrity putting their own specific twist on cracking open a pistachio. I think the folks behind this campaign have done a rather positive job in making the normally tedious task of cracking open a pistachio and rebranding it as something that can be both fun, innovative and personal.
