Cute Caprese Bites

When the first thing out of Boyfriend’s mouth when he enters the kitchen is “OH MY GOD, ARE YOU TRYING TO KILL ME WITH CUTENESS!?” I consider that a win.

This army of cuteness couldn’t be easier to assemble, nor more delicious. Cherry tomatoes and basil are two things I pretty much always have on hand, I just happened to have a container of boccacini hanging out in the fridge that I just had to use up, so out came these little guys.

Sweet, salty, creamy…. perfect.

I wish I had more to say about them, but I just don’t. I think the pictures sum it up pretty good.

So the “recipe” if you’d like to call it that is as such

Cute Caprese Bites

  • 12 cherry tomatoes
  • 12 boccacini balls
  • 12 leafs of basil
  • Fleur de sel (optional)
  • Good quality balsamic vinegar (optional)

Cut cherry tomatoes in half, sprinkle boccacini with sea salt.

Place boccacini on bottom half of cherry tomato, top with basil leaf, and replace top of tomato. Skewer with a toothpick (or something fancier if you wish).

Sprinkle with sea salt and drizzle with balsamic vinegar. I suspect a drizzle of pesto might not be a bad idea either… ooh, or maybe pesto and balsamic on the side so you can dip into whichever you prefer… mmm

Enjoy!

If you can’t find boccacini, just cube some fresh mozzarella and call it a day. :)

Vietnamese Bun Burrito

Powered by a recent obsession with Vietnamese flavors and the Vietnamese Bun, this bearded foodie has created what he calls the Vietnamese Bun Burrito. Rice noodles replace traditional burrito rice and tofu replaces beans. The salsa used is made of cucumber, tomato, mint, red onion, garlic, fish sauce, lime juice and salt. The steak is marinaded with fish sauce, soy sauce, brown sugar and chile paste. The other fillings include fried tofu, bean sprouts, vermicelli rice stick tossed in the fish sauce, lettuce, peanut and sriracha.

“Year of the Rabbit” Burger

Ring in the Chinese New Year today with this Year of the Rabbit burger. Created by the burger genius Char.L.Ton, this dish highlights a rather lonesome rabbit made entirely of edible hamburger ingredients. The patty makes up the body, dots of mustard make up the eyes, a tomato button nose, onions are used in the creation of the eyebrows, whiskers and teeth, the body is a bed of greenery, and the carrot off to the side is a combination tomato and lettuce leaf. The best part about the dish, in my opinion, is the Sriracha-based type face accenting the dish. Eat on!

The Conan O’Brien Burger

Conan O’Brien had a blockbuster year in 2010, being squeezed out of his network television late night talk show slot, taking his show to the Internet renegade style, and finally finding his home on basic cable later in the year. Statues are a decent memorial, but the real tribute is this Conan O’Brien Burger. Our man Char.L.Ton really came through with the details and branding nods, including a Conan Blimp made of tomatoes, Conan’s trademark hair and newly found beard of melted cheese all sitting on a turkey burger. Eat on Conan, eat on!

Chef Boy-R-Dell: Cooks up Bucatini all’ Amatriciana con Pollo

Some people know how to cook, others say they do and head straight to the Mac ‘n’ Cheese. Once in a while you come across a friend who slaps your appetite in the face and turns you into a lil’ Oliver Twist having you say, “mo’ please”. Ryan Dellorusso, a.k.a. Chef Boy-R-Dell is an Italian Stallion in the kitchen. He will definitely have your taste buds tingling with his pancetta-loving menu. Teriyaki Chicken Submarine

This Teriyaki Chicken Submarine was the first real piece of food I had in Boston, other than the conventional college snacks you find in a dorm: Pop-Tarts, cookies, chips, etc. This east coast submarine was stuffed to the brim with Teriyaki flavored chicken, lettuce, tomato and onions. The submarine bread was delicious! It was toasty, yet somewhat greasy, as you can tell by the photo above! Check out more after the jump:

Fried Green Tomato BLT

I personally have never had fried green tomatoes, but from what I’ve heard they are delicious! Which is why they would be even better if they were combined into a classic BLT sandwich! Sliced green tomatoes fried with a crust made out of cornmeal and Panko bread crumbs, put in between a Kaiser roll that has a spread of mayo, mustard, bacon and lettuce! BLTs will never be the same!  (Thx FakeGinger)

Four Finger Burger

This Four Finger Burger is a combination of two beef patties, two butterflied hotdogs, two slices of cheese and three slices of bacon! O yeah, did I mention the fried egg on top of a bed of lettuce and mayonnaise with a couple of tomato and onion slices?! (Thx TIWYH)
