Waffle + Falafel = Wafalafel

Remember that time when we thought it would be fun aka totally genius to see what we could stick in a waffle iron and make more delicious? Well Serious Eats just upped the waffle game with their latest creation, the wafalafel.

It may sound like “waffle-awful” but it looks “waffle-freakin-mazing” to us. Rather than sticking some falafel straight onto the iron (which resulted in a falafel fail), Serious Eats figured out that by wrapping the falafel in some pita bread the ultimate wafalafel experience was achieved.

The perfectly portable wafalafel is not only easier to eat but significantly less messy than your average rolled up falafel sandwich and way more dunk-able. The process is simple, grab your falafel sandwich with some olive oil and throw it in the waffle iron. Cook until your desired crispiness level and boom. The wafalafel is best served with a side of tahini and hot sauce.

Pita Bread, Lebni, Za’atar & Sriracha

A friend of mine was recently turned on to the simplicity of Arabic-themed breakfasts, a hodgepodge of pita bread, Lebni spread (yogurt with oil) and za’atar (a mix of dried herbs, sesame seeds, dried sumac, often times salt and other spices). While those ingredients are all fine and dandy by their lonesome (hit the above ingredients with a freshly sliced cucumber and you’ll be in Middle Eastern breakfast heaven), our friend Matt is one of the 99% who believe that everything can be made better through Sriracha.

Apparently this new dish is “the bomb.” For those up on their Middle Eastern cuisine, you’ll notice that most dishes aren’t traditionally complimented by a side of hot sauce, particularly Sriracha. But this new look might become part of my early morning breakfast routine!

Craving: Chickpea Hummus

I have gained a huge respect for hummus over the last couple years, just from hanging out with Elie, Marc and our boy Gio. As they are all Lebanese, hummus is just another typical food item for them, but for me it’s like a special treat anytime they have some at their houses. Slam some pita up in that and get my grub on. I have been lack of hummus for a good minute now, and I’m craving it!
