Is it a red velvet cake? Is it slathered in cream cheese icing? Nope. It’s a “cake” made with fresh, solid watermelon, coated with yogurt and topped with bulbous blueberries then decorated with sliced strawberries. Is it just as delicious? Yes, and I can guarantee it won’t have you regret that you chummily said, “There’s always room for dessert!”
This fresh idea, literally and figuratively, was invented by tablespoon and they give clear instructions on the best way to cut a watermelon into the shape of a cake, slices and all. This Watermelon Tart is a great dessert particularly because it is an effective defense against those 5-12 pounds that each person supposedly gains on average each holiday season. Try subbing out your customary holiday desserts for this watermelon cake and give your friends a slice of antioxidants, Vitamin C and potassium.

I can’t imagine anything more refreshing than fresh fruit on a hot summer day like today. But if you told me I could have that fresh fruit on top of a brownie pizza covered in sugar then I might just have to hug you. Here we have a fresh fruit brownie pizza just waiting to be devoured.
