I’m not a big fan of sweet potato in general, but this Sweet Potato Cake doesn’t look half bad! The base is a regular spice cake mix combined with pureed sweet potatoes. The frosting isn’t your old run-of-the-mill cream cheese ether, this baby is topped with coconut and pecan infused frosting! I think Sweet Potato just gained a few points in my book. Not ordinary lemon bars though… preferably these Toasted Coconut Lime Bars! The crust on these squares are made with toasted coconut and graham crackers. They are topped off with a mixture of condensed milk, lime juice, and eggs. Oh yeah, can’t forget the colorful lime zest on top! I’ll squeeze the most out of those bars, believe that! My mouth is watering just looking at this pie! What you are looking at is a fudge chocolate brownie pie, spread generously with butter-creamed peanut butter, topped with coconut flakes and big fluffy?marshmallows. As if that wasn’t enough, it is then smothered all over with warm?chocolate?sauce. Melty, chocolate-coated marshmallows, with the salty-sweetness of creamy peanut and coconut on fudge.
