How To Make Birria Lasagna

For those who love birria, Del Real Foods just dropped a Birria Taco Kit that simplifies making the braised, shredded beef at home. It makes 5 double-stacked tacos in just 5 minutes of heating, making it a super quick option for a tasty gluten-free meal – or something fun you can use to transform into a creative new dish.

That’s exactly what Foodbeast Chris did with the birria taco kit. He drew inspiration from the viral birria fusions that have taken over social media, like Birria Pizza or Birria Tamales.

However, Chris made one that uses just the core ingredients of birria and transforms them into a new dish: Birria Lasagna.

Instead of pasta, this lasagna uses layers of tortillas that have Oaxacan cheese fried into them. The birria from the Del Real kit makes it super easy to construct, and all you need is the kit, some Oaxacan cheese, queso fresco, and whatever toppings you desire what the lasagna is baked.

Below is Chris’s recipe he used to make this tasty and easy Birria Lasagna.


  • 1 Del Real Foods Birria Taco Kit (get your own here or see if it’s any local stores near you)
  • 12 oz Oaxacan cheese
  • 10 oz queso fresco
  • Crema for garnish
  • Cilantro for garnish
  • Finely chopped white onions for garnish


  1. Preheat your birria according to package instructions, in the microwave for 3-3 1/2 minutes.
  2. Add a generous layer of Oaxacan cheese to a frying pan or cast-iron skillet. It should be about as wide as your tortillas from the Del Real kit.
  3. Dip a tortilla into the consomme on each side, then place on top of the cheese so it melts into the tortilla and gets crispy on the other side. Repeat for each tortilla.
  4. Construct your lasagna in a baking dish. Start with a layer of cheese-fried tortillas, then top with birria and a layer of crumbled queso fresco.
  5. Repeat until your baking dish is full. Top the entire thing with some consomme and more Oaxacan cheese.
  6. Cover with foil and bake at 375 for 20 minutes. Remove the foil and bake for another 10 minutes to ensure the cheese gets crispy.
  7. Let cool slightly to set, then cut a portion to your liking. Garnish with crema, cilantro, and chopped white onion.

This Couple Just Hosted a Checkers-Themed Wedding Complete with Chicken Tenders Bouquet

Love can be unpredictable. Sometimes we’re attracted by the most unexpected things and it’s usually those unique qualities that spark a connection. Recently wed Arley Smude and Victoria Saunders can attest to unexpected connections.

They met three years ago at a mutual friend’s wedding. Smude happened to be seated behind Victoria, but initially avoided her, thinking she was spoken for after her friend shared his coat. He later discovered that she was in fact single, and mustered up the courage to ask her out. 

Three dates later they found themselves at a Checkers & Rally’s, unaware it would be the beginning of a life-long tradition. Checkers & Rally’s became a staple in their blooming relationship, and eventually Smude proposed to Saunders. There was a catch though: He would only go through with it if Saunders proposed to him in return, but with five Checkers Fry Burgers. 

Saunders decided to take him up on the challenge and one day showed up with 4 out of the 5 fry burgers. Although she only secured four burgers, her friend surprised her with the fifth at their proposal gathering, helping to seal the deal.

In a heartwarming gesture, Saunders got down on one knee, unwrapped one of the burgers and asked for Smude’s hand in marriage; to which he happily said, “I do,” and took a bite.

To celebrate, they decided to take engagement photos at the local Checkers & Rally’s — their epicenter of love. On their wedding day, in honor of their special story and at the request of Smude, Checkers provided the 43-Foot Fry Love Express. The Express treated guests to Checker’s famous fries for free as well as the new Fry-Seasoned Chicken Tenders. The final touch was a beautifully crafted, delicious bouquet of chicken tenders for the bride to be. I’m sure that made for a flavorful flower toss.

Doritos and Taco Bell Aim for Taco Perfection with New Flamin’ Hot Cool Ranch DLT

Glenfiddich’s New Fashion Collaboration Redefines Wealth and ‘Suiting Up’

Scotch is often seen as the spirit of the super-wealthy but Glenfiddich Single Malt Scotch Whisky is looking to change that perception in more ways than one. Most recently, the launch of The New Standard harnesses fashion collaborations with the Waraire Boswell Brand and Rowing Blazers.

Glenfiddich describes the collabs as a re-imagination of traditional symbols of wealth, like the power suit and briefcase. The spirits brand enlisted the two contemporary fashion houses to give these symbols a refresh. The results are co-branded luxury sweatsuits, banker bags, and embroidered patches. All pieces were created to challenge societal norms by prioritizing quality, function, and versatility in their design, without sacrificing professionalism or style.

Waraire Boswell Brand’s reinterpretation of the power suit resulted in a sweatsuit, inspired by the hues of Glenfiddich’s Solera 15 Year Old bottle, Malt Master Brian Kinsman, and the Scottish Gaelic translation of “Glenfiddich” into English: From the Valley of the Deer. The subtle touches of his design, such as the Glenfiddich Stag icon, have a huge impact, as it meets Waraire Bowell’s logo in a careful alignment that’s also a re-contextualization of how a sweatsuit can be adorned.

“When I began the journey to redesign the power suit, I dug deep into the Glenfiddich brand – from its colors, heritage, and continual staying power, which has many synergies with my label,” says Boswell, the Founder of Waraire Boswell Brand. “Practicality is essential in all my designs and comfort is as practical as professionalism. We Used FRIED TAMALES To Make This Zesty Take On Chilaquiles

Here at Foodbeast, it’s hard to find a week where some sort of Mexican food doesn’t pass through the office. He did not disappoint, coming up with some seriously incredible Tamale Chilaquiles, a recipe for which can be found at the bottom of this article.

By chopping up the tamales and deep-frying them, Chris created what may be an upgrade to tortilla chips. After being simmered in Del Real’s salsa, they held their crunch just like you’d hope a proper plate of chilaquiles would, but with four times the flavor. And once they were topped with tender carnitas and a crispy fried egg? I mean, come on. How could this not be delicious?

  • Tamales and Tamalitos*

Step 1: Make Tamale Chips

  • Chill tamales and tamalitos in the freezer for 15 minutes
  • Slice into thin strips
  • Fry at 375 until crispy
  • Let cool on a wire rack

Step 2: Prepare Your ingredients

  • Thinly slice 1 radish
  • Rough chop cilantro
  • Blend red salsa until smooth

Step 3: Let’s Get Cooking

  • Prepare carnitas according to ingredients on the package, either in the microwave or on the stove.
  • Heat 1Tbsp vegetable oil in a large skillet over medium heat until just barely smoking
  • Set aside about ¼ cup of salsa and carefully add the rest to the hot oil and mix. It should start to bubble a bit. Let cook for about 1 minute
  • Add tamale chips to the party and mix with the salsa until fully covered. Be careful not to move them around too much, they may start to break—don’t worry they’ll still be delicious.
  • While the tamale chips are chillin in their salsa bubble bath, start frying your eggs. I like to fry them sunny side up over very high heat so the edges get crispy. 
  • While you’re waiting on the eggs to finish check in on the tamale chips, they should be slightly soft but not mushy. Once they’re teetering on that fine line, cut the heat on your stove.

Step 4: Plating

  • Slide the tamale chips in salsa onto a plate, leave some space off to one side where you can safely land the eggs later.
  • Top the tamale chips with carnitas. Be generous, you deserve it.
  • Slide the eggs onto their safe space, but let them slightly overlap the chips—they like to feel a little dangerous.
  • Garnish with crema, cilantro, radish, and a dusting of cotija cheese

  • Chicken Drumsticks
  • Lee Kum Kee Soy Sauce

  • Honey
  • Apple Cider Vinegar
  • Garlic
  • Lemon

Tools Needed

  • Paper Towels
  • Microplane
  • Basting brush
  • Tupperware for glaze
  • Gallon ziplock
  • Cooler
  • Ice
  • Boning Knife
  • Chef’s Knife


  1. Lollipop the chicken
    1. Cut the chicken into lollipop shapes
      1. Slice around the bone
      2. Peel the skin up and around the knuckle (use a paper towel to help grip)
      3. Pull the meat down to the end of the bone
      4. Remove the loose tendons/bone (use kitchen scissors if needed)
      5. Slice the round meat edge flat so they stand up straight
  2. Make a brine
    1. Soy sauce
    2. lemon (zest + juice)
      1. Grated with microplane
      2. Sliced
      3. Squeezed 
    3. Garlic
      1. Grated with microplane 
  3. Brine the chicken
    1. Add the chicken lollipops to a gallon ziplock with the brine
  4. Make the Oyster bbq sauce
    1. Mix together ingredients
      1. Oyster sauce
      2. Soy sauce
      3. Chili Bean Sauce (Toban Djan) or Sriracha
      4. Honey
      5. Apple Cider Vinegar
    2. If it’s too loose, simmer for a few minutes to reduce and tighten it up (optional)
  5. Pack the Oyster BBQ Sauce
    1. Add the sauce to a sealed tupperware
    2. Bring a basting brush
  6. Load up the cooler and travel “to the game”
    1. Add ice to the cooler
    2. Place chicken in cooler
    3. Place sauce in cooler
  7. Set up the grill
    1. Set up grill for indirect cooking, targeting 325 degrees
  8. Glaze and Grill the chicken
    1. Remove the lollipops from the brine and dunk them into the Oyster BBQ sauce before placing on the grill
    2. Cook for 45 minutes then dunk the lollipops in the glaze
    3. Finish for another 20ish minutes until you hit 175 internal temp on the chicken
  9. Eat these bad boys
    1. Plate and enjoy
